Hello all,

So this is a mix of a few recipes But man is it ever good.

Ingredients
One chopped Onion (medium to large sized)
Two stalks shopped celery
Two cloves minced garlic
One inch chopped ginger
Three peeled and chopped Carrots
One tablespoon Mango Juice
The diced flesh of any squash or pumpkin (about two cups)
Three tablespoons real peanut butter
Six cups of vegetable stock
One tablespoon of curry
One tablespoon oil
Fresh ground black pepper

Directions:
Fry the Onions, celery, garlic and carrots in a pan. Add them to a stock pot adding all the other ingredients. Simmer and stir frequently until everything is soft (I would cut the carrots very thin).
Then use a blender or food processor to blend all the ingredients until smooth. Serve with the fresh ground pepper.

Where in blazes am I supposed to get mango juice in winter? More importantly, where do YOU get it way up there in winter? Is there a secret black market mango pipeline? Hook me up?

Sounds yummy though, its gonna be a long wait 'till mango season...{garrumph}

Mmmmm that sounds good

I like to fry up an onion and a red pepper until they're soft in a pot and then add water, potatoes, and anything else that's in my fridge, but that sounds very very very good, Willow, and I am craving soup now :evil:

Grumpy, yes indeed we have a black market mango pipeline! We have mangos on our counter right now! (Really, there's about one left)

Just be happy I am eating something other than grapes!!

And Grumpy,
I know it isn't sustainable, but I by Mango Juice at the organic food store. but I bet a Tablespoon of Mango chutney might be a good substitute (sweet or spicy depending on your own personal preference)

NO MORE GRAPES!

If you must, make them into a soup and freeze the batch in single-serving portions that you can nuke later on!

:oops: I do that a lot... but not grape soup you crazy person! [-X

Hmmm..I don't think there's an organic food store w/in 200 miles of here, but there IS a teeny tiny gourmet import goodies store, I've gotten some chutney there before. It's in the resort area by the beaches though, I think they close in the winter. It'll be mango season by the time they open again, dangit. Maybe I'll substitute apricot juice and see what happens. I'll let U know if it comes out!
