I'm sure there's more animals and Mythelogical creatures than on there, so why don't we try to work one ourselves out? :]

I tried years ago. The thing is, they all change, and their meanings and messages are enough to fill a book each. I gave up when they started to come to me as a blend of each other... However, this is a good reference.

I would say because people have different meanings for things, and that is influenced by their experience and their cultural exposure. That's why there's no set lists established.
Look at the discussion about the Athame, for example. While there are people who associate that tool with Air, others associate it with Fire, or have the reasons why it could/should be Earth.
Everything is POV, so there's no hard and fast rules.
