I just noticed that there isn't a topic for casseroles So I decided to start one! If your from the south you know that casseroles are very popular! I have bunches of casseroles that I am going to post here as I find them in my recipe box so keep watching!

This is one that I created myself. Every time I fix it everybody loves it!
Ground Turkey Casserole
1 Medium Onion Chopped
1 Can of Campbell s Cream of Mushroom Soup
1 lb of Ground Turkey
1 cup of sliced yellow squash
1 cup of sliced zucchini
1 block of sharp cheddar cheese shredded
2 cups of Bisquick or biscuit mix
1 stick of butter
1/4 to 1 cup of milk
1 9 X 13 baking pan(I usually use a square cake pan)
1. Preheat oven at 425 degrees.
2. Boil Squash and Zucchini until soft. I usually add half a stick of butter for flavoring in with it!
3. While squash and zucchini are boiling cook your ground Turkey until is grays.
4. You can also go ahead and shred your cheese while doing all of this. I try to shred and chop everything first before I start the recipe.
5. Once the ground turkey is cooked add it to the bottom of the pan. (scatter it evenly)
6. Next add chopped onions evenly. Then add the cooked squash and zucchini on top of that.
7. In a separate mixing bowel empty the can of soup and add milk to it until it has a thick liquid consistency.
8. Pour the soup over the squash and zucchini evenly.
9. Add the shredded cheese evenly on top.
10. Melt the butter in a cup.
11. In a separate mixing bowl mix melted butter, Bisquick, and milk until the thick consistency of biscuit dough.
12. Add batter evenly on top of casserole.
13. Cook in Oven until biscuit batter is done. It helps to stick a toothpick to test.

The closest thing I cook that could be considered a casserole is my shepherd's pie. As I tagged my recipe from FoodNetwork, I'm not sure if I can re-post it here...as it was a limited time sort of availability thing.
Though, I have been known to mix ham and frozen peas into Mac & Cheese and bake that. I've also thrown Mozzarella Cheese over leftover pasta and heat it up in the oven.

Ham and frozen peas with mac-n-cheese? that actually sounds good! I will have to try that one!

I think it was one of those Kraft Quick Dinner recipes you get from their website.

I make a vegan shepards pie where I use mushroom gravy and TVp or Veggie ground round instead of meat, my family actually likes it better!
